While in Rome, I wanted to try cacio e pepe, which translates to “cheese and pepper,” both of which are served with a dish of spaghetti or similar, and are a staple of the cuisine of Rome. Simple as it sounds, the mixture is a winner (I even had a repeat on a different night!).
